Sports Illustrated featured Sims in their swimsuit editions from 2000 to 2006. Then in 2002 she signed a multiyear contract with CoverGirl. Through her modeling career Sims has been featured on the covers of fashion magazines such as Lucky Cosmopolitan Glamour Self Allure and Ocean Drive. She has also modelled runways for Givenchy Jerome L'Huillier, Jerome Emanuel and Veronique. Sims began her career in the television industry from 2000 to 2002, when she was the host of MTV House of Style. Following this, she was featured as in the comedy Andy Richter Controls the Universe. Sims was first introduced to her most important role in 2003 as the club entertainment manager Delinda Deline who is on the NBC dramedy Las Vegas. The series, which also starred James Caan Josh Duhamel Nikki Cox James Lesure Marsha Thomason and Nikki Cox, focused on people working at a imagined Las Vegas Strip casino and hotel called Montecito. Sims was a part of the show throughout its five seasons until 2008. Sims was featured in a segment of the 2007 drama Crossing Jordan in the role of Delinda Deline.
